Instant Fried Rice
(serves 4)
1 cup basmati rice, steamed in a 1 1/2 cups water and set aside
2 tbsps peanut oil
1 tbsp sesame oil
2 cloves garlic, minced
handful green onions, minced (including green parts)
any vegetables you like, cut small: broccoli florets, asparagus tips, red pepper, mushrooms
handful pinenuts
2 eggs, beaten
soy sauce to taste
Heat the oils in a heavy skillet or wok, then quickly fry the garlic and green onions. Add any vegetables you choose to add and saute until al dente. Push the vegetables to one side, then add the pinenuts and eggs and stir quickly, breaking up the eggs as they scramble. Add the rice and sprinkle with soy sauce, then toss and stir fry until the rice is warmed through.
I learned this trick for making fried rice from a friend in London — she adds bit of ham and slivers of red pepper and carrot for color. It’s a huge hit here as well!
We had fried rice last night with LOTS of vegetables: broccoli bits, diced red pepper, diced mushrooms. Yum!
