Sim­ple Toma­to Moz­zarel­la Salad

 

Sim­ple Toma­to Moz­zarel­la Salad

(serves four)

2 cups (about 1 pound) heir­loom toma­toes, or fresh plum tomatoes

2 balls mozzarella

zest of 1/2 lemon

driz­zle extra vir­gin olive oil

sprin­kle sea salt

sprin­kle fresh black pepper

If using large toma­toes, slice thick­ly.  If using plums, slice in half.  Arrange on a plat­ter and scat­ter over moz­zarel­la, torn into bite-size pieces.  Dress with oil, salt and pepper.
